India’s first Premier Restaurant & F&B Show was held on 14th and 15th November 2025, with industry leaders in attendance. Great conversations ensued, with learning imparted on current industrial trends and what we could expect in the future. While showcasing the foodservice market, the event also focused on digital transformation, culinary innovation, and the overall growth of the Indian hospitality industry. HoCat VIP brought together some of the most thoughtful voices in India’s hospitality space for an honest conversation about where the industry is headed, creating a comfortable space for hoteliers, chefs, investors, and innovators to share ideas, learn from one another, and explore how the hospitality world can evolve with smarter concepts, better guest experiences, and stronger business strategies.
Mr. Gurtej Singh Matharu was a proud invitee and speaker at the show. Presiding over the event as Head – Central India, Zuper Hotels & Resorts, he brought his deep operational insight to the discussions. With over 14 years of hands-on experience across operations, financial planning, and team leadership, he added a grounded perspective on what it really takes to scale hotels in a changing market. He enlightened the group about supply chains and sustainability, highlighting the practical realities behind building resilient hotel models in today’s evolving landscape.
Talking about the unique farm-to-fork concept at our resorts, Mr. Gurtej explained the hurdles hotels face when supporting local farmers and products, as well as the stark differences in consistency, processes, quality control norms, and pricing. In ardent support of farmers, Empire by Zuper sources all resources from local farmers or the “hard bazaar,” with 90% of the grains, cereals, and vegetables procured directly from them. He explained how an age-old practice is coming back with new relevance as guests look for cleaner and more honest food, and for him, transparency has become the new currency of trust, making the right product a non-negotiable priority.
He pointed to simple shifts in guest preferences, like choosing fresh amla juice over canned drinks, as a sign of how quickly habits are changing and how these trends are encouraging the industry to rethink sourcing and quality. Together, conversations like these remind us that the future of hospitality isn’t just about new ideas or bigger investments. It’s about staying true to what people value today: honesty, quality, and meaningful experiences.
